Christmas Side Dish

If you’re planning your Christmas meal..or just the dish you’ve been ask to bring..might I suggest this recipe for Sweet Potato Casserole. I’ve never been a big fan of sweet potatoes but this recipe is really good.


Sweet Potato Casserole
3 cups cooked and mashed sweet potatoes
1 cup sugar
1/2 cup milk
2 eggs beaten
1 cup chopped pecans
1 Tablespoon Vanilla
1/2 stick Margarin (not melted)
1 cup crushed pineapples (well drained)
Mix all of the above well in a large bowl. Pour in large oblong glass dish.

1 cup brown sugar
1/2 cup self rising flour
1 cup chopped pecans
1 stick melted margarin
mix all and pour over potato mixture. Bake 350 for 30 minutes.

  1. I never heard of sweet potatoes and pineapple together, but it sounds really good! I printed the recipe out. I hope I get time to try it this week!
