Cinco de Mayo Cooking

Unfortunately, I’m no expert on cooking mexican food..I am however really good at eating it… It’s my favorite. This recipe is as close to “Real” Mexican as I can get.. which isn’t really all that close…but at least it’s easy, right?

1 lb ground beef
1 packet taco seasoning
1/3 c water
1 jar nacho cheese dip
1 can rotel
1 packet tortillas

sour cream

In skillet brown ground beef. Drain. Add taco seasoning and 1/3 cup of water. In saucepan mix nacho cheese dip and rotel. Spray 3×9 baking dish with pam or grease with oil. In each tortillas spoon in approximately 3Tbls ground beef & 2 Tbls cheese mixture. Roll and place in baking dish. Continue until dish is full. Mix remaining beef & cheese together and pour over top on dish. Bake 15 to 20 minutes at 350 degrees. Add desired toppings and enjoy.
