I love lasagna. Well, not the lasagna that tastes mostly like Ricotta cheese, too bland. But lasagna that tastes like tomato sauce, yes, this I love. I don’t make it much though because there are only three of us which means we have to eat it for a week. But after Church this past Sunday I decided it was time.
This recipe is a semi-homemade type, very easy to make but it takes a little patience because the sauce needs time to stew. But if you like a rich, flavorful Lasagna try this:
6 lasagna noodles
1 lb ground beef salt & pepper to taste 1 jar of spaghetti sauce
1 can diced tomatoes with basil, garlic and oregano 1 garlic clove minced
16 ounce Ricotta cheese 1/3 c Parmesan cheese with basil and parsley (this is key)
2 c mozzarella cheese 1 egg ½ onion
Brown meat and drain. Add all sauce ingredients. Stew on low for at least an hour. Preheat oven at 350 and boil noodles. In medium size bowl mix all of cheese mixture ingredients. Grease a 13×9 glass casserole dish. To start, pour ½ c sauce with meat into dish. Then layer: noodles, ½ of cheese mixture, ½ of sauce. And Repeat. Then top all with a layer of mozzarella cheese. Cover and cook for 45 minutes. Let stand 15 minutes.
Throw in a salad and some bread and..Mmmmmm!
